The production of walnut jam is very demanding, when the walnuts are not fully ripened. Fresh walnuts are picked from the branch by hand and jam is made after a long process. This flavor, which is converted into jam, leaves a distinctive taste on the palates. While the share of walnut jam in Adilcevaz district's economy is increasing day by day, the district produces an average of 14 tons of walnut jam annually.
Adilcevaz district begins to mature with the arrival of summer and carefully selected organic green walnuts, peeled after the natural processes are peeled. The process of obtaining jam from green walnuts collected in only one month of the year takes about 15 days with the collection of walnuts. Walnut jam, which is eaten by local people for healing, is also served to private guests. Many families make their living from walnut jam, which has become widespread in recent years.
Nurcan Ustun, who has been making walnut jam for 23 years, said that they have been making walnut jam every year when the season comes and they are selling it since 1996.
